2760 North Milwaukee Avenue is home to Hopewell Brewery, created and run by Stephen Bossu and Samantha Lee. Once their first batch of lager is completed, they will be ready to open up their doors to the public, aiming for the end of January.
This isn’t going to be your traditional brewery though. For one, they plan to only serve beer and their ambiance will not mimic what we normally think of when we hear the word “bar.” They plan to make their brewery bright instead of the traditional dim-lighted bars are infamous for. It will also be open anywhere from 6 to 7 nights a week with hours in the 4pm-10pm range. That time frame makes sense since Lee expects most of their business to come from distribution to local bars and restaurants.
So what makes Hopewell Brewery different from the dozens of others around Logan Square apart from the ambiance? Well, according to Bossu, their signature lager has a lot less to hide behind so expect bold flavors, Chicago.
