Mid-March is the season for crawfish and in order to celebrate, chef Alfredo Nogueira (who is originally from Louisiana) is serving up New Orleans’ inspired dishes at Analogue in Logan Square this week.
Nogueira speaks nostalgically about his time in Louisiana and in this Chicago Tribune article, tells Steve Dolinsky about some of the flavors that will be going into this week’s dishes.
“A lot of bay, there a lot of coriander in there, oils seeping out of the lemons; we throw a million cloves of garlic in there, but I think the primary fragrance comes from bay.”
